This is a favorite in our house, or at least with me and david. We call it “chicken in a pot”. It’s really very easy.
Here’s what you need:
A few chicken breasts.
Some bread crumbs
A bit of olive oil
Sliced mushrooms
Tomato sauce or paste (it doesn’t really matter)
Minced garlic
A few shakes of oregano
1 cup Chicken broth, vegetable broth or water
Dredge the chicken in the breadcrumbs
Brown in the olive oil. Don’t worry about cooking them all the way through, they’ll cook more later
Leave the browned chicken in the pot, and add: 1/2 cup of tomato sauce or 1 tablespoon of tomato paste, the mushrooms, garlic, oregano and liquid.
Put on the cover and cook about 15 minutes or until the chicken is cooked through
I like to serve with rice, but I think that the wide egg noodles would be good too

Mmm, that looks good. I think I’ll have to make it, but Chad can’t eat tomatoes anymore due to his old man’s disease (acid reflux). I’ll make it anyway. He doesn’t want the boys and me to be deprived of tomato dishes just because he can’t eat them and he likes to do his own thing most weeknights anyway. We had leftover chicken curry that Chad made for dinner last night. He cooks on the weekends. 🙂
It’s not very tomato-y, and if he eats it without the sauce, he’ll probably be fine.
